Ingredients:

  • 1 pound of pasta, cooked and drained
  • 5 tablespoons of butter
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 small hot green chile, minced
  • 5 tablespoons of flour
  • 2 cups of cream
  • 2 cups of shredded gruyere cheese
  • 1 1/2 cups of shredded cheddar
  • 1/2 cup of grated pecorino or parmesan cheese
  • Salt and black pepper
  • 12 ounces of shrimp, peeled
  • 1/2 cup of breadcrumbs
  • 4 tablespoons of fresh parsley, chopped

Instructions:

  1. Heat the butter in a pan over medium-high heat.
  2. Add the onion and sautΓ© until soft and translucent.
  3. Add the chile and garlic and sautΓ© for another minute.
  4. Preheat the oven to 350 degrees Fahrenheit.
  5. Add the flour to the pan and mix it in well.
  6. Cook this for 5 minutes, stirring often, until it browns a bit.
  7. Pour in the cream 1/2 cup at a time, mixing after each time so that it’s fully incorporated.
  8. Do the same with all the cheeses, adding about 1/2 cup at a time, and stirring it in before adding more.
  9. Add salt and black pepper to taste, then mix in the pasta and shrimp.
  10. Move all this to a casserole dish and pat the mac and cheese into the casserole.
  11. Sprinkle the breadcrumbs and parsley over it all.
  12. Bake uncovered for 15 to 20 minutes, until the top browns.
  13. Remove and let it sit 5 minutes before serving.
