Ingredients:
- 1 pound of pasta, cooked and drained
- 5 tablespoons of butter
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 small hot green chile, minced
- 5 tablespoons of flour
- 2 cups of cream
- 2 cups of shredded gruyere cheese
- 1 1/2 cups of shredded cheddar
- 1/2 cup of grated pecorino or parmesan cheese
- Salt and black pepper
- 12 ounces of shrimp, peeled
- 1/2 cup of breadcrumbs
- 4 tablespoons of fresh parsley, chopped
Instructions:
- Heat the butter in a pan over medium-high heat.
- Add the onion and sautΓ© until soft and translucent.
- Add the chile and garlic and sautΓ© for another minute.
- Preheat the oven to 350 degrees Fahrenheit.
- Add the flour to the pan and mix it in well.
- Cook this for 5 minutes, stirring often, until it browns a bit.
- Pour in the cream 1/2 cup at a time, mixing after each time so that it’s fully incorporated.
- Do the same with all the cheeses, adding about 1/2 cup at a time, and stirring it in before adding more.
- Add salt and black pepper to taste, then mix in the pasta and shrimp.
- Move all this to a casserole dish and pat the mac and cheese into the casserole.
- Sprinkle the breadcrumbs and parsley over it all.
- Bake uncovered for 15 to 20 minutes, until the top browns.
- Remove and let it sit 5 minutes before serving.
