Ingredients:

  • 4 slices of whole-grain bread (choose a low-point option)
  • 4 oz (about 4 slices) of lean turkey breast
  • 4 tbsp light cream cheese (low-fat or reduced-fat)
  • 1 small cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 tsp dried dill (or fresh dill if available)
  • Salt and pepper to taste
  • Optional: lettuce leaves, tomato slices, or any other low-point veggies you like

Instructions:

  1. Start by spreading 1 tablespoon of light cream cheese onto each slice of whole-grain bread.
  2. Lay out the turkey slices evenly on two of the bread slices.
  3. Layer the thinly sliced cucumber and red onion on top of the turkey.
  4. Sprinkle the dill, salt, and pepper on top of the veggies for added flavor.
  5. If you want to include lettuce or tomato, add those on top of the cucumber and red onion.
  6. Top each sandwich with the remaining bread slices, cream cheese side down.
  7. Cut the sandwiches in half, if desired, and serve immediately.
