Ingredients

  • For the Chocolate Layer:
    • 1/2 cup coconut oil, melted
    • 1/2 cup unsweetened cocoa powder
    • 1/4 cup powdered erythritol (or your preferred keto sweetener)
    • 1 teaspoon vanilla extract
  • For the Strawberry Layer:
    • 1/2 cup coconut oil, melted
    • 1/2 cup cream cheese, softened
    • 1/4 cup powdered erythritol (or your preferred keto sweetener)
    • 1/4 cup unsweetened strawberry puree (fresh or frozen)
    • 1 teaspoon vanilla extract
  • For the Vanilla Layer:
    • 1/2 cup coconut oil, melted
    • 1/2 cup cream cheese, softened
    • 1/4 cup powdered erythritol (or your preferred keto sweetener)
    • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Chocolate Layer:
    • In a mixing bowl, whisk together the melted coconut oil, cocoa powder, powdered erythritol, and vanilla extract until smooth.
    • Pour the chocolate mixture into a silicone mold or a lined mini muffin tin, filling each cavity about one-third full. Place in the freezer for about 15-20 minutes until set.
  2. Make the Strawberry Layer:
    • In a separate bowl, combine the melted coconut oil, softened cream cheese, powdered erythritol, strawberry puree, and vanilla extract. Whisk until smooth and creamy.
    • Once the chocolate layer has set, pour the strawberry mixture over the top of the chocolate layer in each cavity, filling them about two-thirds full. Return to the freezer for another 15-20 minutes to set.
  3. Prepare the Vanilla Layer:
    • In another bowl, mix the melted coconut oil, softened cream cheese, powdered erythritol, and vanilla extract until well combined and smooth.
    • After the strawberry layer has set, pour the vanilla mixture on top of the strawberry layer, filling each cavity to the top. Freeze for an additional 30-45 minutes, or until fully set.
  4. Serve:
    • Once fully set, carefully remove the Neapolitan fat bombs from the mold. If you used a muffin tin, you may need to run a knife around the edges to release them.
    • Store any leftovers in an airtight container in the freezer for a quick and satisfying keto snack.
