Homemade Vegan Pretzel Buns

Ingredients:

– 1 cup warm non-dairy milk (not too hot)

– Pinch of Sugar

– 1.5 tsp active dry yeast

– 2.5 cups all-purpose flour

– 1 tsp salt

– 2 tbsp softened vegan butter

– 4.5 cups water

– 3 tbsp baking soda

1. Combine non-dairy milk, yeast, and sugar in a small bowl. Let sit for 10 minutes until yeast foams to the top.

2. Mix flour and salt in a large bowl. Add milk mixture and combine until no flour is visible.

3. Add vegan butter and knead dough until the bowl is clean. Add additional flour 1 tbsp at a time if the dough is too sticky.

4. Form the dough into a ball. Spray the mixing bowl with oil and place the dough ball in the center of the bowl. Cover with a towel and let rise for 1.5 hours. I let the dough rise in the oven with just the light on. Don’t turn on the oven 😉

5. Once the dough has risen, form into a log and cut into eight pieces. Roll each piece into a ball and place on a floured surface. Cover for 30 minutes.

6. Preheat oven to 425 degrees Fahrenheit.

7. Combine water and baking soda into a medium size pot and bring to a boil. Make sure it doesn’t boil over.

8. Boil each bun one-at-a-time for 30 seconds on each side.

9. Place each bun on a baking sheet lined with parchment paper and sprayed with oil. Let cool and dry.

10. Cut crosses into the top of each bun with a small sharp knife

11. Bake buns for 15 minutes in oven until Brown

12. Remove from oven and coat buns with melted vegan butter. OPTIONAL: Top with coarse salt or sesame seeds before brushing on the butter.

13. Let cool and serve!
