Laureen King’s exquisite Tortellini Soup is a culinary masterpiece that brings the flavors of Italy to your table. This robust and comforting dish seamlessly blends vegetables, ground beef, and sausage with cheese-filled tortellini, all simmered in a savory broth. The recipe begins with a medley of aromatic ingredients—onions, celery, carrots, and garlic—sautéed to perfection in olive oil, creating a fragrant base for the soup. The addition of extra lean ground beef and sliced mild Italian sausage introduces a rich and savory depth to the dish.

What sets this soup apart is its vibrant array of vegetables, including coarsely chopped tomatoes, kidney beans, cabbage, green beans, and zucchini. The amalgamation of these fresh and wholesome ingredients imparts a hearty and nutritious character to the soup. The flavor profile is further enhanced with a blend of herbs and spices, including dried basil, oregano, salt, and pepper, creating a symphony of tastes that dance on the palate.

The cooking process is a testament to the patience and dedication of crafting a truly flavorful soup. After simmering the ingredients in beef stock for 30 minutes, a splash of dry red wine is introduced, infusing the soup with a subtle complexity. The final touch involves the addition of cheese-filled tortellini and fresh spinach, adding a delightful textural contrast. Cooked uncovered for an additional 20 minutes, the pasta reaches a tender yet firm consistency.

As the soup fills the kitchen with its irresistible aroma, the anticipation builds. Ladled into bowls and adorned with a generous sprinkle of freshly grated Parmesan cheese, each serving is a celebration of Italian culinary finesse. With 287 calories per serving, this Tortellini Soup is not only a feast for the senses but also a wholesome and satisfying meal. Laureen King’s creation is a testament to the joy of crafting a dish that nourishes both body and soul—a perfect addition to any table, whether for a cozy family dinner or a gathering of friends.
