Ingredients for grits:
- 4 cups of whole milk
- 1 cup of grits
- 1 cup of grated white cheddar cheese
- 1/4 cup of heavy cream
- 2 tablespoons of butter
- 1/4 teaspoon of salt
- 1 large scallion
Ingredients for shrimp:
- 1 pound of large shrimp
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 2 tablespoons of butter
- 1/2 cup of andouille sausage
- 2 cloves of garlic
- 3/4 cup of chicken stock
- 2 tablespoons of parsley
- 1 large scallion
- 1/2 lemon
Instructions:
- Bring the milk to a boil in a saucepan and whisk in the grits.
- Reduce the heat to a simmer and cook for 5-30 minutes depending on the type of grits you’re using.
- Add the cheese, butter, cream and salt.
- Whisk the ingredients together and stir in the scallions.
- Cover and set aside.
- Season the shrimp with the paprika, salt and pepper.
- Heat butter in a skillet and add the sausage.
- Cook for 3-5 minutes or until the sausage is brown on all sides.
- Add the garlic and cook for one more minute.
- Add the shrimp and cook until they’re pink on both sides.
- Pour in the chicken stock and deglaze the pan by scraping off the brown bits on the bottom with a spoon.
- Allow the sauce to reduce and thicken for about 2 minutes.
- Squeeze the lemon juice into the sauce and season as needed.
- Spoon the grits into a bowl and top with the shrimp, sausage and sauce.
- Garnish with the scallions and parsley.
Recipe for Cajun honey butter sauce:
Ingredients:
- 1/2 cup of honey
- 1/4 cup of melted butter
- 1 tablespoon of Cajun seasoning
- 1 tablespoon of lemon juice
Instructions:
- Whisk the ingredients together until smooth.
- Spoon the sauce over the shrimp and grits.
Recipe for fluffy eggs:
Ingredients:
- 2 eggs
- 1 tablespoon of butter
- Salt and pepper to taste
Instructions:
- Crack the eggs into a bowl and whisk them together.
- Heat the butter in a skillet over medium heat.
- Pour in the eggs and cook until they’re set.
- Season with salt and pepper to taste.
- Serve the eggs over the grits and shrimp.
