3 medium zucchini (600g)
1 carrot (3 small)
1 small onion
2 tablespoons of ground flax seeds
6 tablespoons of water
sweet paprika
salt and pepper
vegan mozzarella cheese 80g (such as Daiya or Violife)
Olive oil

  1. Grate the zucchini, carrot and onion.
  2. Put everything in a large bowl and then add parsley, garlic, paprika, salt and pepper.
  3. In a small bowl, whisk together the flax seeds and water to make a flax egg. Let it sit for 10 minutes to thicken.
  4. Add the flax egg and the vegan cheese to the zucchini mixture and stir well to combine.
  5. Form the pancakes with your hands and place them on a baking sheet lined with parchment paper.
  6. Bake at 180 degrees Celsius for 20-25 minutes or until golden and firm.
