Ingredients:
3 medium zucchini (600g)
1 carrot (3 small)
1 small onion
Parsley
2 tablespoons of ground flax seeds
6 tablespoons of water
garlic
sweet paprika
salt and pepper
vegan mozzarella cheese 80g (such as Daiya or Violife)
Olive oil
Directions:
- Grate the zucchini, carrot and onion.
- Put everything in a large bowl and then add parsley, garlic, paprika, salt and pepper.
- In a small bowl, whisk together the flax seeds and water to make a flax egg. Let it sit for 10 minutes to thicken.
- Add the flax egg and the vegan cheese to the zucchini mixture and stir well to combine.
- Form the pancakes with your hands and place them on a baking sheet lined with parchment paper.
- Bake at 180 degrees Celsius for 20-25 minutes or until golden and firm.
