Meaty Cabbage Soup

Meaty Cabbage Soup

Ingredients:

  • 1 lb ground beef or ground pork
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 medium head of cabbage, chopped
  • 3 large carrots, sliced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the ingredients: Chop the cabbage, dice the onion, mince the garlic, and slice the carrots.
  2. Cook the meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or pork and cook until browned, breaking it up with a spoon as it cooks. Remove the meat with a slotted spoon and set aside.
  3. Cook the vegetables: In the same pot, add the diced onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  4. Add the cabbage and carrots: Stir in the chopped cabbage and sliced carrots, cooking for another 5 minutes until they start to soften.
  5. Combine ingredients: Return the cooked meat to the pot. Add the beef broth, diced tomatoes (with their juice), tomato paste, smoked paprika, dried thyme, dried oregano, bay leaf, salt, and pepper. Stir well to combine.
  6. Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, or until the vegetables are tender.
  7. Adjust seasoning: Taste the soup and adjust the seasoning if needed.
  8. Serve: Ladle the soup into bowls and garnish with chopped fresh parsley.

Tips:

  • For extra flavor, you can add a splash of Worcestershire sauce or a teaspoon of soy sauce.
  • If you prefer a spicier soup, add a pinch of red pepper flakes.
  • This soup can be made ahead of time and reheats well, making it perfect for meal prep.

Enjoy your Meaty Cabbage Soup!
