Here is a recipe for meatloaf with mashed potatoes and sweet peas ¹:

Ingredients for meatloaf:

  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 2 pounds ground beef
  • 2 eggs
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Glaze ingredients:

  • 1/4 cup tomato paste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon Worcestershire
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt

Ingredients for potatoes:

  • 3 pounds russet potatoes peeled and cut into 2-3 inch chunks
  • 3/4 cup milk more to thin out if you’d like
  • 1/2 cup plain yogurt
  • 2 tablespoons butter
  • 1 teaspoon salt increase as needed
  • 1 1/2 teaspoons garlic powder

Instructions:

  1. Mix breadcrumbs and milk in a bowl. Let it sit for a minute until the mixture thickens.
  2. Combine the ground beef, eggs, Worcestershire, salt, onion powder, garlic powder and the breadcrumb mixture in a large bowl. Mix well.
  3. Pat the meatloaf into a loaf shape that is even across the top; make sure it is no thicker than 3 inches.
  4. Peel and slice the potatoes, then add them to the stainless steel insert of your Instant Pot. Cover with water.
  5. Place a trivet over the potatoes, then loosely wrap the meatloaf in the foil, and place on the trivet.
  6. Place the lid on the Instant Pot, set the valve to ‘sealing’ and pressure cook on high pressure for 30 minutes.
  7. When the cooking cycle has completed, carefully perform a quick pressure release.
  8. Drain the water from the potatoes, then add in the milk, yogurt, butter, salt and garlic powder. Mash the potatoes.
  9. In a small bowl, stir together the tomato paste, smoked paprika, Worcestershire, apple cider vinegar and salt.
  10. Use a silicone brush to brush the glaze evenly over the meatloaf.
  11. Slice the meatloaf and enjoy!
