Low-Point Baked Cod with Lemon and Garlic

4 (4 oz) cod fillets
2 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon olive oil
Salt and pepper, to taste
Fresh parsley, chopped, for garnish (optional)

Preheat your oven to 400°F (200°C). Lightly coat a baking dish with cooking spray.
Place the cod fillets in the prepared baking dish in a single layer.
In a small bowl, combine the minced garlic, fresh lemon juice, lemon zest, olive oil, salt, and pepper. Stir until well combined.
Pour the lemon-garlic mixture over the cod fillets, ensuring they are evenly coated.
Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
Remove from the oven and garnish with fresh chopped parsley, if desired.
Serve hot and enjoy!
