- Prepare Keto Pastry Dough:
- In a bowl, mix almond flour, coconut flour, xanthan gum (if using), and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the egg and knead the dough until it comes together. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
- Make the Filling:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
