Indulge in the savory and satisfying Keto Broccoli Cheddar Bites, a culinary creation that seamlessly combines the wholesome goodness of broccoli with the richness of cream cheese and cheddar, all encased in a crispy, keto-friendly coating. These delectable bites are perfect for those following a low-carb lifestyle, offering a delightful alternative to traditional snacks without compromising on flavor or texture.

To commence this culinary adventure, begin by finely chopping 1 ½ cups of thawed and drained frozen broccoli, placing it in a large bowl. Add the minced garlic, grated cheddar, red pepper flakes, salt, pepper, and softened cream cheese to the bowl. Mash the ingredients together with a fork until well combined, forming a flavorful mixture. Roll the mixture into balls no larger than 1 inch in diameter and arrange them on a waxed paper-lined baking sheet or tray. With this recipe, you can expect to yield approximately thirty broccoli cheese balls. Freeze the balls for three to four hours to ensure they maintain their shape during the breading process.

For the keto breading, set up a breading station with three shallow dishes. Spread coconut flour in one, whisk together eggs and cream in another, and place pork rind crumbs in the third. Once the broccoli cheese balls are frozen, roll each ball in the coconut flour for a light coating, dip it in the egg mixture, and then coat it thoroughly with pork rind crumbs.

Prepare a deep, heavy-duty saucepan with 3 to 4 cups of oil for frying and heat it to a temperature between 330°F and 350°F. Carefully add four to six balls at a time to the hot oil, frying them for about three minutes or until they achieve a golden brown exterior. Use a slotted spoon to remove the fried balls and place them on a paper towel-lined plate to drain any excess oil. Repeat this process with the remaining balls, ensuring they are cooked to perfection.

The resulting Keto Broccoli Cheddar Bites boast a crispy exterior that gives way to a creamy and cheesy interior, making them a delightful snack or appetizer. While it’s tempting to indulge immediately, allow the bites to cool to room temperature before serving to avoid the risk of burning your mouth with the melty cheese. Each serving, containing approximately 167 calories, 14.3g of fat, 2.4g of carbohydrates, and 8.5g of protein, exemplifies the balance between indulgence and adhering to a ketogenic diet. Enjoy these flavorful bites as a satisfying addition to your low-carb repertoire, bringing a burst of taste and texture to your snack or appetizer selection.
