- Creamy Cucumber Salad
- 1/3 cup thinly sliced cucumber
- 1/4 cup finely diced carrots
- 1 finely chopped date
- 1 T sliced almonds
Dressing:
- 3 T silk almond milk yogurt or plaij plant-based yogurt
- 1 tsp mayo (optional)
- 1 T lemon juice
- 1/4 tsp kosher salt, pepper, garlic powder, and oregano
- 1 T finely chopped fresh dill
On toasted I spread a layer of hummus, then piled high some greens, sliced tomato, and the creamy cucumber salad.
