cottage cheese flatbread pizza

Ingredients:

For the flatbread

  • 1 cup 
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

For the Toppings:

  • 1/2 cup sugar-free pizza sauce
  • 1 cup shredded mozzarella cheese
  • Various toppings (pepperoni, mushrooms, bell peppers, olives, etc.)
  • Fresh basil (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Flatbread: In a large mixing bowl, combine the cottage cheese, eggs, shredded mozzarella, Parmesan cheese, almond flour, baking powder, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Shape the Flatbread: Spread the mixture onto the prepared baking sheet, forming a rectangular or circular shape about 1/4 inch thick.
  4. Bake the Flatbread: Bake in the preheated oven for 15-20 minutes or until the flatbread is firm and golden brown.
  5. Add Toppings: Remove the flatbread from the oven and spread the sugar-free pizza sauce evenly over the top. Sprinkle the shredded mozzarella cheese over the sauce and add your desired toppings.
  6. Bake the Pizza: Return the flatbread to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Serve: Remove the pizza from the oven, let it cool for a few minutes, and garnish with fresh basil if desired. Slice and enjoy!
