Ingredients:
- 2 cups cooked and cooled jasmine rice (preferably day-old rice)
- 1 cup cooked chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, corn, and diced bell peppers work well)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 3 green onions, chopped
- Salt and pepper to taste
Instructions:
- Prepare Ingredients:
- Cook the jasmine rice according to package instructions and let it cool. Day-old rice is ideal for fried rice as it is less sticky.
- Cook the chicken breast and dice it into small pieces.
- Beat the eggs in a bowl and set aside.
- Chop the green onions and prepare the mixed vegetables.
- Stir-Fry Chicken and Vegetables:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the diced chicken and stir-fry until cooked through.
- Add the mixed vegetables and continue to stir-fry until they are tender-crisp.
- Push Ingredients to the Side:
- Push the chicken and vegetables to one side of the wok, creating an empty space.
- Scramble Eggs:
- Pour the beaten eggs into the empty space in the wok.
- Allow the eggs to set for a few seconds, and then scramble them with a spatula until cooked.
- Combine Ingredients:
- Mix the cooked chicken, vegetables, and scrambled eggs together in the wok.
- Add Rice:
- Add the cooked and cooled jasmine rice to the wok.
- Use a spatula to break up any clumps of rice and mix it thoroughly with the other ingredients.
- Season the Fried Rice:
- Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice.
- Stir well to ensure the sauce is evenly distributed throughout the fried rice.
- Add Green Onions:
- Add chopped green onions to the fried rice and stir to combine.
- Adjust Seasoning:
- Taste the fried rice and add salt and pepper if needed. Adjust the seasonings to your preference.
- Serve:
- Once everything is well mixed and heated through, remove the fried rice from the heat.
- Serve hot and enjoy your homemade Chicken Fried Rice!
