Instructions:

  1. Prepare Ingredients:
    • Cook the jasmine rice according to package instructions and let it cool. Day-old rice is ideal for fried rice as it is less sticky.
    • Cook the chicken breast and dice it into small pieces.
    • Beat the eggs in a bowl and set aside.
    • Chop the green onions and prepare the mixed vegetables.

    • Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

    • Push the chicken and vegetables to one side of the wok, creating an empty space.
  4. Scramble Eggs:
    • Pour the beaten eggs into the empty space in the wok.
    • Allow the eggs to set for a few seconds, and then scramble them with a spatula until cooked.
  5. Combine Ingredients:
    • Mix the cooked chicken, vegetables, and scrambled eggs together in the wok.
  6. Add Rice:
    • Add the cooked and cooled jasmine rice to the wok.
    • Use a spatula to break up any clumps of rice and mix it thoroughly with the other ingredients.
  7. Season the Fried Rice:
    • Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice.
    • Stir well to ensure the sauce is evenly distributed throughout the fried rice.
  8. Add Green Onions:
