• 2 cups cooked and cooled jasmine rice (preferably day-old rice)

  1. Prepare Ingredients:
    • Cook the jasmine rice according to package instructions and let it cool. Day-old rice is ideal for fried rice as it is less sticky.

    • Push the chicken and vegetables to one side of the wok, creating an empty space.
  4. Scramble Eggs:
    • Pour the beaten eggs into the empty space in the wok.
    • Allow the eggs to set for a few seconds, and then scramble them with a spatula until cooked.
  5. Combine Ingredients:
    • Mix the cooked chicken, vegetables, and scrambled eggs together in the wok.
  6. Add Rice:
    • Add the cooked and cooled jasmine rice to the wok.
    • Use a spatula to break up any clumps of rice and mix it thoroughly with the other ingredients.
  7. Season the Fried Rice:
    • Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice.
    • Stir well to ensure the sauce is evenly distributed throughout the fried rice.
  8. Add Green Onions:
    • Add chopped green onions to the fried rice and stir to combine.
  9. Adjust Seasoning:
    • Taste the fried rice and add salt and pepper if needed. Adjust the seasonings to your preference.
  10. Serve:
    • Once everything is well mixed and heated through, remove the fried rice from the heat.
