Ingredients:
- 1/4 cup extra-virgin olive oil, divided
- 1 cup cornmeal
- 1 tbsp. Cajun seasoning
- 4 catfish fillets
- Kosher salt
- Freshly ground black pepper
- Lemon wedges, for serving
Directions:
- Preheat oven to 425ยฐF and drizzle 2 tbsp. oil on a baking sheet.
- Combine cornmeal and Cajun seasoning on a plate.
- Season catfish with salt and pepper, then dredge fish in seasoned cornmeal, pressing to coat.
- Place fish on the baking sheet and drizzle with remaining 2 tbsp. oil.
