  • 1/4 cup extra-virgin olive oil, divided
  • 1 cup cornmeal
  • 1 tbsp. Cajun seasoning
  • 4 catfish fillets
  • Kosher salt
  • Freshly ground black pepper
  • Lemon wedges, for serving


  1. Preheat oven to 425°F and drizzle 2 tbsp. oil on a baking sheet.
  2. Combine cornmeal and Cajun seasoning on a plate.
  3. Season catfish with salt and pepper, then dredge fish in seasoned cornmeal, pressing to coat.
  4. Place fish on the baking sheet and drizzle with remaining 2 tbsp. oil.
  5. Bake until golden and fish flakes easily with a fork, about 15 minutes.
