This is the perfect dish for those hot summer days, long fall days and even winter days in front of the fireplace. I don’t know about you, but it seems I make fewer and fewer BLTs with the price of bacon.

Plus the bacon is paper thin so you can barely taste it. When I want a BLT now, I go directly to the local meat store. They have thicker sliced bacon there, even if it does cost more.

This salad is so creamy, tastes just like the well loved sandwich, but rather than bread, we will be using pasta. I can recall Church potlucks where at least three or four women would bring this salad. It is a good thing that BLTs are one of the favorite sandwiches eaten.

Which type of macaroni is best for this salad?
Personally, I prefer elbow macaroni or the small shells. Either of these two will hold some of the creamy and flavorful sauce with bits of bacon and seasoning.
Will the lettuce get soggy?
I never add lettuce until right before it is being served. The same for the spinach if I use that instead of the iceberg lettuce. I suppose you could use Romaine lettuce or if your favorite is not listed, try that. Again, do not add the lettuce until right before serving.
Why does my pasta dry out?
The first step is to not overcook the pasta. When pasta becomes mushy, it is going to soak up all the dressing in the salad. You can add a drop or two of Olive Oil to the cooked noodles. This will help prevent them from sticking to each other and also they will not dry out.
What should I serve this with?
This can be eaten as the main course or you could use it as a side dish for basically any type of dinner. This would be the perfect side to cold chicken on a picnic, it would be great with grilled chicken, Pork, Beef or any type of meat you like.

1 ½ cups mayonnaise (you could use vegan, if desired)
1 tbsp white vinegar
½ cup chopped green onions
1 cup baby spinach or iceberg lettuce
2 cups uncooked noodles
1 cup bacon, cooked and crumbled
1 large beefsteak tomato, chopped
½ cup Cheddar Cheese, shredded
Salt and pepper to taste

FIRST STEP:
Cook the pasta until it is Al’ Dente, or to the way you like it.
Cook the bacon and allow it to cool
SECOND STEP:
Drain the pasta and rinse under cold water
THIRD STEP:
In a large bowl combine the mayonnaise, vinegar, green onions, lettuce or spinach, bacon, tomato, shredded Cheddar Cheese and the salt and pepper to taste
Stir this to combine
FOURTH STEP:
Add in the pasta and stir to mix well
Place into the refrigerator and chill for at least two hours
