- 2 boneless, skinless chicken breasts
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup chopped fresh basil or parsley
- Salt and pepper to taste
- Olive oil for brushing
- Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
- Prepare the Chicken: Rinse and pat dry the chicken breasts. Place each chicken breast on a cutting board and make parallel cuts about 1/2 inch apart, making sure not to cut all the way through. The chicken should still hold together.
- Stuff the Chicken: In a small bowl, combine the minced garlic, Parmesan cheese, mozzarella cheese, chopped basil or parsley, salt, and pepper. Mix well.
- Stuff the Chicken: Gently pry apart the slits in the chicken breasts and stuff the cheese mixture into the cuts.
- Brush with Olive Oil: Brush the chicken breasts with a little olive oil on both sides. This will help them crisp up in the air fryer.
- Air Fry: Place the stuffed chicken breasts in the preheated air fryer basket. Cook for about 20-25 minutes, depending on the thickness of your chicken breasts. Check for doneness by using a meat thermometer; the internal temperature should reach 165°F (74°C).
- Serve: Once cooked, remove the chicken breasts from the air fryer and let them rest for a few minutes. This allows the juices to redistribute and keeps the chicken moist.
