• 8 ounces (dry) whole grain penne
• 2 cloves garlic, minced
• 1/3 cup walnuts, chopped
• 3 /4 cup sun-dried tomatoes in oil, drained and chopped
• 1 tablespoon fresh basil, chopped
• 1 pound low-fat extra-firm tofu, drained and crumbled
• 1/8 teaspoon salt
As directed on the package, cook the pasta.
Meanwhile, combine the tofu, garlic, walnuts, sun-dried tomatoes, basil, and salt in a
sizable mixing dish. Mix thoroughly. Add the cooked spaghetti and mix thoroughly.
Can be served chilled or heated.
