Broth based vegetable soup which can be made on the stove or in a crockpot!
1 cup shredded carrots- 1 shredded parsnip
- 2 celery stalks diced
- 1 cup green beans (I used frozen)
- 1/2 cups peas (I used frozen)
- 1 bay leaf
- Salt and pepper to taste
- 2tsp lemon juice
- 2tbs parsley
- 1tbs thyme
- 1tsp Rosemary
- 1tsp ground sage
- 1tbs Dill
- 1tbs minced garlic
- 1tsp onion powder
- 1tsp garlic powder
- 1 cup cabbage (sliced into bite size pieces)
- 1 yellow onion diced
- 1 green pepper diced
- 7 cups vegetable stock
- (Optional: for a little spice, add 1-2tsp of crushed red pepper flakes)
Add everything to a large pot and bring to a boil. Turn temperature down and let simmer for about 45 minutes or until vegetable are soft.
(Could also add all ingredients to a crockpot and cook on low for 6 hours or on high for 4 hours)
