1 cup quinoa, rinsed and cooked according to package instructions
1 cup black beans, cooked and drained
1 cup corn kernels (fresh or frozen)
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped red onion
2 cloves garlic, minced
1/4 cup fresh cilantro, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
1 tablespoon nutritional yeast (optional)
2 tablespoons flaxseed meal + 5 tablespoons water (flax eggs)
Breadcrumbs for coating (optional)

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a small bowl, mix the flaxseed meal with water to create flax eggs. Let it sit for a few minutes until it thickens.
In a large mixing bowl, combine cooked quinoa, black beans, corn, red bell pepper, red onion, garlic, cilantro, cumin, chili powder, salt, pepper, and nutritional yeast.
Add the flax eggs to the mixture, and stir well until everything is combined.
Shape the mixture into bite-sized patties or balls and place them on the prepared baking sheet.
If desired, coat each quinoa bite with breadcrumbs for an extra crunch.
Lightly spray the tops of the bites with cooking spray to help them crisp up in the oven.
Bake in the preheated oven for 20-25 minutes or until the quinoa bites are golden brown and firm.
Allow the quinoa bites to cool for a few minutes before serving.
