Ingredients:

  • 4 medium-sized potatoes
  • 1/2 cup bread crumbs
  • 1/2 cup finely chopped fresh herbs (such as parsley, chives, and cilantro)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Peel the potatoes and cut them into small pieces. Place them in a pot of boiling water and cook until tender, about 15-20 minutes.
  2. Drain the potatoes and mash them with a potato masher or fork until smooth.
  3. Add the bread crumbs, chopped herbs, garlic powder, onion powder, paprika, salt, and pepper to the mashed potatoes. Mix well until everything is combined.
  4. Use your hands to form the potato mixture into small patties, about 2-3 inches in diameter.
  5. Heat the olive oil in a non-stick pan over medium-high heat.
  6. Once the oil is hot, carefully place the potato patties into the pan. Cook for 3-4 minutes on each side, or until they are golden brown and crispy.
  7. Remove the potato patties from the pan and place them on a plate lined with paper towels to remove any excess oil.
  8. Serve the potato patties hot with your favorite dipping sauce or toppings, such as vegan sour cream or guacamole.
