Ingredients:
- 1 cup creamy peanut butter
- 3/4 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the creamy peanut butter, granulated sugar, unsweetened applesauce, vanilla extract, baking soda, and salt. Mix until well combined and a dough forms.
- Scoop out portions of dough (about 1 tablespoon each) and roll them into balls. Place the balls on the prepared baking sheet, spacing them a few inches apart.
- Use a fork to create a crisscross pattern on top of each cookie by gently pressing down on the dough balls.
- Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
