This delicious lemon orzo is my favourite summer lunch! It’s super creamy without any dairy at all and it only takes 20 minutes to make.

Ingredients:

1 cup orzo pasta (ensure it’s labeled vegan)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup vegetable broth

1 cup coconut milk (or any other plant-based milk)

Zest of 1 lemon

Juice of 1 lemon

1 cup fresh spinach leaves

1/4 cup fresh basil leaves, chopped

Salt and pepper to taste

Vegan parmesan cheese (optional, for serving)

Instructions:

Cook the orzo pasta according to the package instructions. Drain and set aside.
