  • 2 cucumbers, sliced
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste


  1. In a large bowl, combine the sliced cucumbers and diced tomatoes.
  2. In a small bowl, mix together the olive oil, red wine vinegar, and Dijon mustard. Season with salt and pepper to taste.
  3. Pour the dressing over the cucumber and tomato mixture and toss to coat.
  4. Stir in the chopped parsley and toss again.
  5. Serve immediately or refrigerate until ready to serve. Enjoy
