Vegan Apple Walnut salad w/ arugula & dijon vinaigrette recipe
- Chopped apple
- Chopped walnuts
- Dijon mustard vinaigrette (made by whisking together olive oil, dijon mustard, apple cider vinegar, honey, and salt)
- In a large bowl, combine the arugula, chopped apple and chopped walnuts.
- Drizzle with dijon mustard vinaigrette and toss to evenly coat.
- Serve and enjoy your apple walnut salad with arugula and dijon vinaigrette!
Note: You can also add some crumbled blue cheese or sliced red onion to give more flavor to your salad.
