1 cup samp
1 cup dried beans
4 cups water
Salt, to taste
2 tablespoons vegetable oil
1 onion, chopped
2 garlic cloves, minced
1 tomato, chopped

Soak the samp and beans overnight in separate bowls.
Drain the samp and beans and place them in a large saucepan with the water.
Bring to a boil, then reduce the heat to low and simmer until the samp is soft and the beans are cooked, about 1 hour.
Season with salt.
In a separate pan, heat the oil over medium heat.
Add the onion and garlic and cook until soft and fragrant, about 5
