Ingredients

Peel and grate
-1kg / 2lb potatoes
Squeeze out the liquid and season with
-salt & black pepper
Set aside. In the meantime sauté
-Baby spinach
until softened and cut the
-cherry tomatoes.
Add a generous amount of oil to the pan and add a handful of the grated potato.
Flatten with a spoon and spread
-1 tbsp vegan cream cheese
-a bit of the spinach
-a few cherry tomatoes
Cover with more potatoes, cook until golden brown on both sides and enjoy 🙂
