All you need is pesto, bread, your favorite vegan cheese, and a little bit of vegan mayo or butter.

I included the ingredients for the pesto on the bottom of the recipe.
Spread 2 slices of bread with vegan mayo or butter on one side.
Layer with pesto and cheese.
Grill in a cast iron skillet from both sides until crispy and browned
