Ingredients
1 1/2 cupsall purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 2 packets stevia or other natural sweetener
•2 teaspoons cinnamon
• 1/2 teaspoon salt
• 3/4 cup wheat bran
•1/4 cup oat bran
• 3 tablespoons ground flax seed
• 1 1/3 cups almond milk
•1/3 cup canola oil
• 1 teaspoon vanilla extract
• 1 cup quinoa, cooked
• 1/2 cup walnuts, chopped
•1/2 cup vegan chocolate chips
•1/2 cup hemp seeds
Directions
- Preheat oven to 400°F. Coat a 12-cup muffin pan in cooking spray.
- Add the flour, baking powder, baking soda, stevia, cinnamon, and salt to a sizable
mixing basin. The wheat bran, oat bran, and flax seed should all be whisked in after the
mixture has been fully blended. - Add the almond milk, canola oil, and vanilla extract to a separate bowl. Pour in the
quinoa and continue whisking afterward. With a wooden or plastic spoon, add the dry
ingredients and stir to combine. The hemp seeds, chocolate chips, and walnuts should
be combined. Keep in mind that there should still be some chunks after mixing. - Pour the batter into the muffin pan, only filling each cup to 3/4 full. Place in oven and bake for 20 – 22 minutes, or until a toothpick inserted into the middle comes out clean
