Quinoa pasta salad with cucumber


  • 2 cups cooked quinoa
  • 2 cups cooked pasta of your choice
  • 1 large cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1 can artichoke hearts, drained and chopped
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • 2 tsp dried oregano
  • 1/4 cup lemon juice
  • Salt and pepper to taste

It’s a great way to use quinoa and pasta together, and it’s loaded with veggies and protein. It’s also vegan and gluten-free, if you use gluten-free pasta.
