Ingredients:

  • 30-40 whole grain saltine crackers (or you can use reduced-fat saltines)
  • 1/2 cup (1 stick) unsalted butter (reduced from 1 cup)
  • 1/2 cup packed brown sugar (reduced from 1 cup)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup pecans, chopped (reduced from 3/4 cup)
  • 1 1/2 cups semi-sweet chocolate chips (reduced from 2 cups)

Preparation:

  1. Preheat oven to 350º F and lightly grease a 12×17-inch jelly roll pan with non-stick spray.
  2. Spread saltine crackers out in an even layer in the greased jelly roll pan.
  3. In a medium saucepan over medium heat, combine butter and brown sugar. Cook, stirring frequently until butter is melted and sugar has dissolved. Bring to a boil and cook for 2-3 minutes, stirring continuously. Reduce heat to a simmer and cook for another 1-2 minutes.
  4. Remove from heat and stir in vanilla extract and salt, whisking until incorporated.
  5. Pour caramel mixture evenly over the crackers, smoothing as necessary.
  6. Sprinkle chopped pecans on top of caramel layer. Bake for 7-9 minutes, or until bubbly.
  7. Remove from oven and let cool for 5 minutes.
  8. Sprinkle chocolate chips on top of hot caramel and let sit for 2 minutes before spreading into an even layer.
  9. Let cool, then cut or break into pieces. Store in an airtight container at room temperature or in the freezer.
