Ingredients:
- 30-40 whole grain saltine crackers (or you can use reduced-fat saltines)
- 1/2 cup (1 stick) unsalted butter (reduced from 1 cup)
- 1/2 cup packed brown sugar (reduced from 1 cup)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup pecans, chopped (reduced from 3/4 cup)
- 1 1/2 cups semi-sweet chocolate chips (reduced from 2 cups)
Preparation:
- Preheat oven to 350º F and lightly grease a 12×17-inch jelly roll pan with non-stick spray.
- Spread saltine crackers out in an even layer in the greased jelly roll pan.
- In a medium saucepan over medium heat, combine butter and brown sugar. Cook, stirring frequently until butter is melted and sugar has dissolved. Bring to a boil and cook for 2-3 minutes, stirring continuously. Reduce heat to a simmer and cook for another 1-2 minutes.
- Remove from heat and stir in vanilla extract and salt, whisking until incorporated.
- Pour caramel mixture evenly over the crackers, smoothing as necessary.
- Sprinkle chopped pecans on top of caramel layer. Bake for 7-9 minutes, or until bubbly.
- Remove from oven and let cool for 5 minutes.
- Sprinkle chocolate chips on top of hot caramel and let sit for 2 minutes before spreading into an even layer.
- Let cool, then cut or break into pieces. Store in an airtight container at room temperature or in the freezer.
