Ingredients
3-4 large potatoes boiled and peeled
¼ cup mint leaves chopped
¼ cup bread crumbs or 1 slice of bread or 2 tablespoon buckwheat flour
1 tablespoon dried mango powder optional
2 green chillies finely chopped,use as per taste
1 piece ginger finely chopped
Salt as per taste
1 tablespoon coconut oil or ghee or any vegetable oil to coat the patties
Oil/ghee for frying
Instructions
Mash the potatoes ,sweet potato in a bowl.
Add bread crumbs with ginger,chillies,salt and mint.
Take a small amount of mix and shape them into round patties
Apply ghee/coconut oil on top of the patties,
For cast iron (traditional frying method)
Keep the potato patties into the refrigerator 3-4 hours.
Heat oil/ghee in a pan,start cooking the patties in a batch of 2-3 patties.
Cook on low/medium flame until light brown on both sides adding more oil/ghee during the cook.
For air fryer potato patties (low oil version)
Plate the patties/tikkis in a tray and place them into the freezer for 4-5 hours
Preheat the air fryer at 200C/390F for 5 minutes
Place the frozen patties into the air fryer,cook at 200C for 18 minutes in total,use oil spray/brush in between and flip them over.
use the grill option for 3-4 minutes to get golden brown and crispier potato patties
Serve these delicous patties hot with mint chutney or sweet tamarind chutney
For cooking in oven
Preheat the oven for 10 minutes at 200C/390F.
Place the frozen patties into a tray in the oven. Cook at 200C/390F for 25 minutes in total, use oil spray/brush in between and flip them o
Notes
Keeping the raw patties in refrigerator/deep freezer will help them to retain their shape while cooking.
For better results with air fryer version,freeze the patties and cook them directly.
You may replace buckwheat flour with any other gluten free flour like quinoa flour.
Addition of sweet potatoes will increase the nutritional value but will result in less crispier patties..

While using ghee/coconut oil on these patties, you will need to cook with your exhaust ON to avoid those extra smoke/fumes in your kitchen.
