INGREDIENTS:

  • 1/2 an onion
  • 3 carrots
  • 2 stalks celery
  • 3- 4 potatoes
  • 8 oz of lentils (uncooked)
  • Water
  • 1 1/2 T Better than Bullion, vegetable
  • 1 bay leaf
  • Salt and pepper to taste

INSTRUCTIONS:

Sauteed onion, carrots and celery. Add water and better than bullion, potatoes and bay leaf. Bring to a boil. Add lentils and turn to low heat and simmer until lentils and potatoes are soft. Salt and pepper to taste.
