9 oz frozen spinach, thawed and drained well
1 1 oz package ranch dip mix

Keto Ranch Spinach Dip

Ingredients:

  • For the Dip:
    • 2 cups fresh spinach, finely chopped (or 1 cup frozen spinach, thawed and drained)
    • 1 cup sour cream
    • 1/2 cup mayonnaise
    • 1/2 cup cream cheese, softened
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup shredded mozzarella cheese
    • 1 packet (or 2 tablespoons) keto-friendly ranch seasoning mix (or homemade – see below)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon dried dill
    • 1/2 teaspoon dried parsley
    • Salt and pepper to taste
  • For Homemade Ranch Seasoning (if not using packet):
    • 1 tablespoon dried parsley
    • 1 teaspoon dried dill
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried chives
    • 1/2 teaspoon salt
    • 1/4 teaspoon ground black pepper

Instructions:

  1. Prepare the Spinach:
    1. If using fresh spinach, finely chop it and blanch it in boiling water for about 1-2 minutes, until wilted. Drain and squeeze out excess moisture.
    2. If using frozen spinach, thaw it completely and squeeze out all the excess water to avoid a watery dip.
  2. Make the Dip:
    1. In a large mixing bowl, combine the sour cream, mayonnaise, and softened cream cheese. Mix until smooth and well combined.
    2. Add the grated Parmesan cheese, shredded mozzarella cheese, ranch seasoning mix (or homemade ranch seasoning), garlic powder, onion powder, dried dill, and dried parsley. Mix until all ingredients are thoroughly incorporated.
    3. Fold in the prepared spinach, ensuring it is evenly distributed throughout the mixture.
    4. Taste the dip and season with salt and pepper as needed.
  3. Chill and Serve:
    1. Transfer the dip to a serving bowl and cover it with plastic wrap.
    2. Refrigerate for at least 1 hour to allow the flavors to meld together.
    3. Before serving, give the dip a good stir to ensure even consistency.
  4. Garnish (Optional):
    1. Garnish with a sprinkle of additional dried dill or chopped fresh parsley for a pop of color.

Tips:

  • Serve the keto ranch spinach dip with keto-friendly dippers such as celery sticks, cucumber slices, bell pepper strips, or pork rinds.
