Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. Prepare the Dough:
    • In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, powdered erythritol, baking powder, and salt.
    • In a separate bowl, mix the warm water, melted coconut oil, eggs, and apple cider vinegar.
    • Combine the wet and dry ingredients, stirring until a dough forms. The dough should be soft but not sticky.
  3. Shape the Bread:
    • Divide the dough into small balls, about 1-1.5 inches in diameter.
    • In a small bowl, mix the melted butter with cinnamon and optional erythritol for a sweeter filling.
    • Dip each dough ball into the cinnamon butter mixture, then place them in the prepared loaf pan. You can stack them or arrange them in a pattern you like.
  4. Bake the Bread:
    • Bake in the preheated oven for about 30-35 minutes, or until the bread is golden brown and cooked through. A toothpick inserted into the center should come out clean.
  5. Cool and Serve:
    • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
