Keto Pretzel Bites with Cheese SauceI

Ingredients:

  • For the Pretzel Bites:
    • 1 ½ cups shredded mozzarella 
    • 2 oz cheese
    • 1 cup almond flour
    • 1 large egg
    • 1 tsp baking powder
    • 1 tbsp melted butter (for brushing)
    • Coarse salt for sprinkling

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Melt the Cheeses:
    • In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 1 minute, stir, then microwave for another 30 seconds or until melted and well combined.
  3. Mix the Dough:
    • In a separate bowl, combine almond flour and baking powder. Add the melted cheese mixture and the egg. Mix until you form a dough. You can use your hands to knead it together until smooth.
  4. Shape the Pretzel Bites:
    • Divide the dough into small, bite-sized pieces. Roll each piece into a ball and place it on the prepared baking sheet.
  5. Brush with Butter & Sprinkle with Salt:
    • Brush the tops of the pretzel bites with melted butter and sprinkle with coarse salt.
  6. Bake:
    • Bake for 10-12 minutes or until golden brown. Let them cool slightly before serving.

Ingredients:

  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt and pepper to taste

Instructions:

  1. Heat the Cream:
    • In a small saucepan over medium heat, heat the heavy cream until it begins to simmer.
  2. Add the Cheese:
    • Reduce the heat to low and stir in the shredded cheddar cheese. Continue stirring until the cheese is completely melted and the sauce is smooth.
  3. Season:
    • Stir in garlic powder, onion powder, salt, and pepper to taste.
  4. Serve:
    • Pour the cheese sauce into a serving bowl and serve warm alongside the pretzel bites.
