Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup sugar-free marinara sauce
- 1 ½ cups shredded mozzarella cheese
- 20 slices pepperoni
- 1 tsp Italian seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C). Season chicken breasts with salt, pepper, and Italian seasoning.
- Sear the chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden, about 4-5 minutes per side. Transfer to a baking dish.
- Assemble: Spread marinara sauce over each chicken breast, then top with mozzarella cheese and pepperoni slices.
- Bake for 15-20 minutes until the chicken is fully cooked and the cheese is bubbly.
