Ingredients:

  • 1/2 cup almond flour

  • 2 tbsp unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

For the glaze:

  • 1/4 cup powdered keto-friendly sweetener (such as powdered erythritol)
  • 1-2 tbsp heavy cream
  • 1/2 tsp vanilla extract

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or butter.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.
  3. In a separate bowl, whisk together the sour cream, melted butter, egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until well combined. The batter should be thick and sticky.
  5. Spoon the batter into the donut pan, filling each mold about 2/3 full.
  6. Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted in the center comes out clean.
  7. While the donuts are baking, make the glaze by whisking together the powdered sweetener, heavy cream, and vanilla extract in a small bowl. Adjust the consistency by adding more or less cream, as needed.
  8. Once the donuts are done, remove them from the oven and let them cool for a few minutes before removing them from the pan.
  9. Dip each donut into the glaze, making sure to coat the top and sides. Place the glazed donuts on a wire rack to set for a few minutes before serving.
