KETO CHICKEN QUESADILLA I

Ingredients:

For the Quesadilla:

  • 1 lb (450 g) chicken breast or thighs, cooked and shredded
  • 1 cup shredded cheddar  cheese (or cheese of your choice)
  • 1 cup shredded mozzarella cheese
  • 1-2 tbsp olive oil or avocado oil
  • 1/2 cup diced bell pepper (optional, for added flavor and crunch)
  • 1/2 cup diced onions (optional)
    • 1/2 tsp garlic powder
    • 1/2 tsp paprika
    • 1/2 tsp ground cumin
    • Salt and pepper to taste

    For the Tortilla:

    • 2 large  eggs
    • 1/4 cup almond flour
    • 1/4 cup coconut flour
    • 1/4 tsp baking powder
    • A pinch of salt
    • 1/4 cup water (adjust as needed for consistency)
  • Instructions:
    1. Prepare the Tortilla:
      1. In a bowl, whisk together the eggs, almond flour, coconut flour, baking powder, salt, and water until smooth.
          1. Heat a non-stick skillet over medium heat and lightly grease it with a bit of oil.
          2. Pour a small amount of the batter into the skillet, spreading it out to form a thin, round tortilla. Cook for 1-2 minutes on each side until golden brown and cooked through. Repeat with the remaining batter to make more tortillas.
        1. Prepare the Filling:
          1. In a bowl, mix the shredded chicken with garlic powder, paprika, cumin, salt, and pepper.
          2. If using, sauté the diced bell peppers and onions in a skillet with a bit of oil until softened.
        2. Assemble the Quesadilla:
          1. Heat a large skillet over medium heat and add a small amount of oil.
          2. Place one tortilla in the skillet. Sprinkle with cheddar and mozzarella cheese, then add the seasoned chicken on top. If using, add the sautéed bell peppers and onions.
          3. Place another tortilla on top and press down gently. Cook for 2-3 minutes on each side until the cheese is melted and the tortilla is golden brown and crispy.

          1. Remove from the skillet and let it cool for a minute before cutting into wedges.
