Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free cherry preserves
  • 1/4 cup sliced almonds

Instructions:

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, erythritol, and salt. Mix well.
  3. Add the melted butter and vanilla extract to the dry ingredients. Mix until a crumbly dough forms.
  4. Reserve about 1/4 cup of the dough for the topping. Press the remaining dough into the bottom of the prepared baking dish.
  5. Spread the cherry preserves evenly over the crust.
  6. Crumble the reserved dough over the cherry preserves.
  7. Sprinkle the sliced almonds on top.
  8. Bake for 20-25 minutes or until the edges are golden brown.
  9. Allow the bars to cool in the baking dish before slicing and serving.
