Ingredients
ALMOND FLOUR
110g (1 cup)
UNSWEETENED ALMOND MILK 60ml (1/4 cup)
COCONUT OIL 30ml (2 tbsp)
A PINCH OF SALT
CAULIFLOWER RICE 200g (2 cups)
SHREDDED CHEESE 120g (1 cup)
Instructions
In a large mixing bowl, combine the almond flour with salt.
Pour in coconut oil and unsweetened almond milk.
Knead until smooth dough forms, then cover it and set aside for 15-20 minutes.
Microwave the cauliflower rice for about 5 minutes, then squeeze out the excess moisture with a cheesecloth or a paper towel.
Roll out the dough into a disk.
Place two-thirds of the cheese on top.
Add the cauliflower rice and more cheese.
Pinch the edges of the dough together to close the filling.
