Vegan Pizza with Cauliflower Cheese
This vegan pizza is made with a homemade dough and a creamy cauliflower cheese that is dairy-free and gluten-free. You can customize it with your favorite toppings and enjoy a delicious and satisfying pizza night.
Ingredients
- Dough
- 3 cups flour (360g)
- 1 packet of yeast
- 1 tbsp sugar
- 1 1/2 tbsp olive oil
- 1 cup warm water
- 1/2 tsp salt
- Vegan Cheese
- 1/2 cauliflower (375g)
- 3.5 tbsp tapioca flour
- 1 tbsp nutritional yeast
- 1-2 tsp salt
- *add salt to taste preferences
- 1/2-1 cup non-dairy milk, unsweetened and no flavor (I used 3/4 cup)
- Pizza Sauce
- 3/4 cup tomato sauce
- 1/4 tsp garlic powder
- 1/4 tsp parsley
- 1/4 oregano
- A pinch red pepper flakes
Instructions
To make the dough, heat the water to 110-115°F (43-46°C) in the microwave for about 30 seconds. It should feel like a very hot bath. Add the sugar and yeast to the water and let it sit for 10 minutes until it becomes foamy and fragrant.
In a large bowl, sift in half of the flour and salt. Add the olive oil and the yeast mixture and stir to combine. Gradually add the remaining flour and stir until a sticky dough forms.
Turn the dough out onto a floured surface and knead it for about a minute until it is smooth and soft. If it is too sticky, add some more flour. If it is too dry, add some more water.
Shape the dough into a ball and place it in an oiled bowl. Cover with a dish towel and let it rise in a warm place for at least 30 minutes or until it doubles in size.
While the dough is rising, make the vegan cheese. Cut the cauliflower into small pieces and boil them in a pot of water until they are soft enough to pierce with a fork.
Drain the cauliflower and add it to a high speed blender along with the tapioca flour, nutritional yeast, salt, and non-dairy milk. Start with half a cup of milk and add more as needed. The less milk you use, the better. Blend until smooth and creamy.
Transfer the cheese mixture to a small saucepan and cook over medium heat, stirring constantly, until it thickens and becomes stretchy. This may take 10 to 15 minutes. Set aside until ready to use.
In a small bowl, whisk together the tomato sauce, garlic powder, parsley, oregano, and red pepper flakes. Adjust the seasonings to your taste.
Preheat oven to 375°F and lightly grease a baking sheet or pizza pan.
Punch down the risen dough and transfer it to a floured surface. Roll it out into a thin circle, about 12 inches in diameter. Place it on the prepared pan and poke some holes with a fork to prevent air bubbles.
Spread the pizza sauce evenly over the dough, leaving some space for the crust. Sprinkle some vegan cheese over the sauce and add any toppings you like.
Bake for 15 to 20 minutes or until the crust is golden and the cheese is melted.
