Hasselback potatoes dress up plain old baked potatoes and turn them into something truly special! These specially cut potatoes burst with buttery flavor in nearly every bite because the butter can seep into the cuts. This is a must make any time you want to really bring the wow factor your dinner table!

Ingredients

  • Yukon Gold or Russet Potatoes , 4 washed
  • Butter or olive oil 4 tbsp
  • Salt 1 tsp
  • Pepper 1 tsp
  • Thyme springs 1 tbsp
  • Smoked paprika1 tsp
  • ¼ cup grated parmesan cheese
  • Thyme for garnish
  • Water 1 cup

Instructions

How to make Air Fryer Hasselback Potatoes   

First, evenly slice the potatoes crosswise toward the bottom about 1 cm apart. Make sure to not cut all the way through the potato!

Next, mix the butter or oil, salt, and herbs in a small bowl. Once the mixture is ready, use a brush to douse the potato with herb mixture.

When the potatoes are ready, pour water into the inner pot of your Instant Pot and then place a trivet on the bottom. Finally, place the potatoes on top of the tivet.

Close the lid, seal the vent, and then pressure cook for 12 minutes followed by a natural release of pressure.

Once done remove the potatoes and brush them with oil and herbs again.

Next place the potatoes into your Air Fryer’s basket and cook at 180 C or 356 F for another 10 minutes.

Once done, carefully remove the potatoes from the air fryer, place on a plate, and garnish with freshly grated parmesan cheese and thyme.

If you want to skip the Instant Pot, you can. When you use the air fryer, cook it for 20 minutes at the same temperature for 20 minutes, flipping halfway through. 

If you prefer to bake the hasselback potatoes, follow these steps.

If you just want to bake the potatoes, you can easily. Just increase the baking time from 10 minutes to 20 minutes.
