Ingredients for grits:

  • 4 cups of whole milk
  • 1 cup of grits
  • 1 cup of grated white cheddar cheese
  • 1/4 cup of heavy cream
  • 2 tablespoons of butter
  • 1/4 teaspoon of salt
  • 1 large scallion

Ingredients for shrimp:

  • 1 pound of large shrimp
  • 1 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 tablespoons of butter
  • 1/2 cup of andouille sausage
  • 2 cloves of garlic
  • 3/4 cup of chicken stock
  • 2 tablespoons of parsley
  • 1 large scallion
  • 1/2 lemon

Instructions:

  1. Bring the milk to a boil in a saucepan and whisk in the grits.
  2. Reduce the heat to a simmer and cook for 5-30 minutes depending on the type of grits you’re using.
  3. Add the cheese, butter, cream and salt.
  4. Whisk the ingredients together and stir in the scallions.
  5. Cover and set aside.
  6. Season the shrimp with the paprika, salt and pepper.
  7. Heat butter in a skillet and add the sausage.
  8. Cook for 3-5 minutes or until the sausage is brown on all sides.
  9. Add the garlic and cook for one more minute.
  10. Add the shrimp and cook until they’re pink on both sides.
  11. Pour in the chicken stock and deglaze the pan by scraping off the brown bits on the bottom with a spoon.
  12. Allow the sauce to reduce and thicken for about 2 minutes.
  13. Squeeze the lemon juice into the sauce and season as needed.
  14. Spoon the grits into a bowl and top with the shrimp, sausage and sauce.
  15. Garnish with the scallions and parsley.

Recipe for Cajun honey butter sauce:

Ingredients:

  • 1/2 cup of honey
  • 1/4 cup of melted butter
  • 1 tablespoon of Cajun seasoning
  • 1 tablespoon of lemon juice

Instructions:

  1. Whisk the ingredients together until smooth.
  2. Spoon the sauce over the shrimp and grits.

Recipe for fluffy eggs:

Ingredients:

  • 2 eggs
  • 1 tablespoon of butter
  • Salt and pepper to taste

Instructions:

  1. Crack the eggs into a bowl and whisk them together.
  2. Heat the butter in a skillet over medium heat.
  3. Pour in the eggs and cook until they’re set.
  4. Season with salt and pepper to taste.
  5. Serve the eggs over the grits and shrimp.
