These baby potatoes cooked in an air fryer are crispy on the outside and soft on the inside. They are also covered in a delicious garlic butter sauce.

Ingredients

For the garlic butter

  • ½ cup of plant-based butter
  • 2 minced garlic cloves
  • 1 Tbsp of thyme
  • 1 Tbsp of olive oil

For the potatoes

  • 24 oz bag of baby potatoes
  • 1 tsp of sea salt or Kosher salt
  • ½ tsp of black pepper
  • 1 Tbsp of fresh chopped parsley

Instructions

For the garlic butter

  • Mix butter, thyme, olive oil, and garlic together until it looks delicious and is evenly combined—Reserve some butter to drizzle over the potatoes at the end.

For the Potatoes

  • Start by thoroughly cleaning the potatoes by scrubbing them under cold, running water. Drain them and use a kitchen towel to pat them dry.
  • Next, combine the potatoes with the garlic butter, parsley, pepper, salt, and black pepper in a large bowl. To uniformly coat the potatoes, combine all the ingredients in a mixing bowl.
  • Add the buttered and seasoned potatoes into the air fryer and shake the basket so that the potatoes are all in one layer.
  • At 200C/400F, air-fry the potatoes for 12 to 15 minutes or until they are soft enough to pierce with a fork and crispy on the outside. Make sure they are cooked evenly by shaking the basket halfway through.
  • When the potatoes are done, take them out of the air fryer basket and serve them immediately. Enjoy baby potatoes right away while they’re tasty and buttery, and crispy.
