Creamy Keto Apricot Wraps

Ingredients
20-30 fresh apricots or peach slices
1 (8 oz) package cream cheese, room temperature
1 tablespoon fresh thyme leaves
salt and pepper to taste
1 lb sliced bacon
Preparation
Prepare the Apricots: Halve and remove the pit from each fresh apricot. If using peach slices, ensure they’re thick enough to hold the cream cheese mixture.
Cream Cheese Mixture: Combine cream cheese, thyme, and black pepper in a small bowl. Place a spoonful of the mixture on each fresh apricot half or peach slice.
Cook Bacon: In a large skillet on medium-high heat, cook bacon for 2 minutes on each side. Do not cook until crispy.
Wrap with Bacon: Roll each apricot half or peach slice in a strip of bacon (or half strip, depending on the length). Secure with plain wooden toothpicks.
Finish Cooking: Heat skillet to medium-low. Gently place wrapped apricots or peaches in the pan and cook until the bacon is crispy, rotating if needed. Do not overcook. Serve immediately while filling is still warm.
