INGREDIENTSā£:

  • Creamy Cucumber Salad
  • 1/3 cup thinly sliced cucumber
  • 1/4 cup finely diced carrots
  • finely chopped date
  • 1 T sliced almonds

Dressing:

  • 3 T silk almond milk yogurt or plaij plant-based yogurt
  • 1 tsp mayo (optional)
  • 1 T lemon juice
  • 1/4 tsp kosher salt, pepper, garlic powder, and oregano
  • 1 T finely chopped fresh dill

On toasted I spread a layer of hummus, then piled high some greens, sliced tomato, and the creamy cucumber salad.
