Chocolate Peanut Butter Stuffed Dates

Ingredients:
- 12 medjool dates, pitted and sliced open
- 1/4 cup peanut butter (or any nut butter of your choice)
- 80 g dark chocolate, chopped
- 1 tbsp coconut oil
- 2 tsp maple syrup
Instructions:
- Fill each date with about a teaspoon of peanut butter. You can also use whole nuts instead of nut butter if you prefer. Place the stuffed dates on a baking sheet lined with parchment paper and refrigerate for 15 minutes.
- In a small heatproof bowl, combine the chocolate, coconut oil, and maple syrup. Set the bowl over a pot of simmering water and stir until melted and smooth. Alternatively, you can microwave the chocolate mixture in 15-second intervals, stirring well after each one, until melted and smooth.
- Remove the dates from the refrigerator and dip them in the chocolate sauce, using a fork or a toothpick to lift them out. Let the excess chocolate drip off and place them back on the baking sheet. Drizzle any remaining chocolate over the dates.
- Refrigerate the dates for another 15 minutes or until the chocolate is set. Enjoy them cold or at room temperature. Store them in an airtight container in the refrigerator for up to 10 days.
